Summer fruit granola parfait + exciting news!

Hello everyone,

it's already July 1st! Hard to believe how fast time goes. The last time I wrote a new post was at the end of last year. I know I am so bad at maintaining my blog being up-to-date. I blame my study choice... Enough rambling, I have a new recipe for you! Actually, it's not a real recipe. Just a quick, easy peasy and super healthy breakfast/snack/lunch/dinner idea which is perfect on hot summer days like today. Created this to celebrate four passed exams/finals and because it's the first day of a new month! Enough good reasons, what'ya say?

I have two exciting news to share:
The first one is that I'm in the middle of writing an e-book! Get excited for a bunch of healthy meal recipes, from breakfast dishes to midnight snacks, and of course, some tips and tricks for healthy eating. I'm doing everything to release the finished product at the end of July.
Annnd the second thing is that I'm moving to Germany in the beginning of October! I'm going on an Erasmus exchange for one year. (Irgendwelche Leserinnen und Leser aus Mainz? Schreibt mir! :))

Summer fruit granola parfait

Ingredients (for one jar)
1 slice of pineapple
1 peach/nectarine
6 tbsp granola (homemade prefered)
1 small banana
a few tbsp of raspberry smoothie*

Preparation
1. Slice the fruit in bite size pieces. 
2. Take a mason jar and layer the ingredients (from bottom to top):
1st: pineapple
2nd: peach/nectarine
3rd: granola
4th: banana
5th: raspberry smoothie
3. Bon appétit!

* Raspberry smoothie ingredients
1 cup frozen raspberries
1 small banana
2-3 frozen strawberries
a splash of rice milk
a splash of water
(plantbased protein powder - optional)

Just mix everything in a high speed blender until smooth.

Poletni sadni granolin parfait

Sestavine (za en kozarec)
1 rezina ananasa
1 breskev/nektarina
6 žlic granole (po možnosti domače)
1 majhna banana
nekaj žlic malininega smoothie-ja*

Priprava
1. Sadje narežemo na manjše koščke.
2. Sestavine naložimo po vrsti v steklen kozarec (od spodaj navzgor):
- ananas
- breskev/nektarina
- granola
- banana
- malinin smoothie
3. Dober tek!

* Malinin smoothie
1 skodelica zmrznjenih malin
1 majhna banana
2-3 zmrznjene jagode
malo riževega mleka
malo vode

Sestavine zmiksamo v blenderju do gostega.

Vegan glutenfree pomegranate protein pancakes

Hello everyone,

after a few months of being absent, here is a brand new yummy recipe - vegan GF pomegranate protein pancakes! For a healthy, dairyfree and sugarfree breakfast (or lunch or dinner of dessert, you decide). Top them with any kind of nut butter or fruit - I decided for almond butter, dark chocolate pieces, more pomegranate seeds, banana coins, mandarin pieces and a sprinkle of homemade rawnola (raw granola). 

And then I went to pancake heaven...

Recipe (for 5 smaller pancakes):

Ingredients:
1 small banana
3/4 cup dairyfree milk
2 tbsp buckwheat flour
1 tsp baking powder
1/2 cup pomegranate seeds
1 tsp maca powder
1,5 tbsp rice protein
1/2 tsp vanilla extract

Preparation:
1. Mix all ingredients in a blender.
2. Grease a skillet with coconut oil and put two heaping tablespoons of batter per pancake on it. Bake on medium heat, each side for a few minutes.
3. Top with whatever you like and enjoy!

Recept (za 5 manjših palačink):

Sestavine:
1 majhna banana
3/4 skodelice rastlinskega mleka
2 žlici ajdove moke
1 žlička pecilnega praška
1/2 skodelice semen granatnega jabolka
1 žlička mace
1,5 žlice riževih proteinov
1/2 žličke vanilijevega ekstrakta

Priprava:
1. Vse sestavine zmiksamo v blenderju.
2. Ponev namastimo s kokosovim oljem in nanjo damo po dve zvrhani žlici mase na palačinko. Pečemo na srednjem ognju, vsako stran nekaj minut.
3. Nadevajte jih s čimerkoli želite (po želji)!

Cook with me: Healthy banana pancakes

Hello everyone,


I don't know about you, but I love eating pancakes. Especially if they are healthy. I found the following recipe two months ago but didn't have time to try it out. The best thing about it is that there are only two ingredients required to make these healthy pancakes! And they taste very good. So why not share it?



Ingredients:

- 1 banana
- 1 egg




Method:

1) Mash the banana in a bowl, then add the egg and mix until you get a homogeneous consistency.
2) With a ladle, put a small amount of the mixture on a preheated pan (I didn't add any oil, butter or cooking spray) and bake on each side until it turns golden or even dark brown.









And why are these pancakes so healthy? Bananas contain fiber, minerals (potassium, manganese, magnesium), vitamins (B6 and C), and are very low in saturated fat, cholesterol and sodium. Eggs are a great source of protein, minerals, vitamin B12 and healthy fats. Just the best for you.

Cook with me: Summer smoothie

Hello everyone,


it is getting hotter day by day here in Slovenia. Perfect weather for going to the seaside. But, there is one problem - when the temperature rises, my appetite falls. It is hard to eat the same kind of food that we consume during wintertime, right? 


From my experience, the best thing to keep my stomach full for a while is a freshly prepared smoothie. It contains a lot of vitamins (which is super good for the body) and its taste is also delicious. This is why I decided to share with you my favorite smoothie recipe which I named the Summer smoothie - I bet you don't know why I named it like this!





Ingredients (for 2 smoothies):

5 to 8 ice cubes
2 cups of milk (regular, soy, coconut, almond, rice etc.)
1 banana
1 cup of raspberries (fresh or frozen)
1 tablespoon of oatmeal


Method:
Just mix all ingredients listed above in a blender for a minute or two and it is done! Serve in a glass jar and enjoy your creation.
